Dad Biscotti
Dad Biscotti!
These cookies are a total Kraus Family tradition. My dad always has a stockpile on hand, and I never leave Seattle without enough Biscotti to last until my next visit.
It’s also the topic of almost every conversation. For example, this is the first text my Dad sent me after I got married:
“Well newlyweds hope you were able to relax a little today. We did - golf early then laundry. Baked some biscotti also. Retirement is wonderful. Dad”
Now that I have you are Biscotti Believers, here is the recipe, DIRECT from star baker: my father:
Preheat the oven to 375. Grease a cookie sheet or use parchment paper, which is what I do.
1. Mix 3 and 1/3 cup flour; 2 1/2 teaspoons baking powder and 1/2 teaspoon salt in a small bowl.
2. In a large bowl mix:
- 1/3 cup corn or canola oil
- 1 cup sugar
- 3 eggs
- 1 teaspoon lemon zest (optional)
- 1/2 teaspoon orange zest (optional)
- 1 teaspoon anise or almond extract (optional but I use the almond)
- 1 1/2 teaspoon vanilla
- 1 cup chocolate chips (optional but I use them)
- 1/2 to 1 cup chopped pistachio nuts (sometimes I use; sometimes not)
- on occasion I add some orange juice or lemon juice - about a tablespoon - for a little extra flavor
3. Stir the flour mixture into the liquid mixture until well blended and smooth. If a little more moisture is needed add a little extra oil.
4. Cut the dough in thirds and shape each third into a log about 10” long 2-3” wide and 3/4 inch thick. Sprinkle the top of the logs with sugar. Transfer the logs onto the greased or parchment paper lined cookie sheet.
5. Bake for 25 minutes. When done place the logs on a rack and let them cool for about 5-10 minutes.
6. When cool enough to handle put each log on a cutting board and cut crosswise into about 1/2 inch thick cookies. Place them down on one side back on the cookie sheet and bake for 7 minutes. When done turn them over and bake for 7 more minutes. Put them on a rack to cool. I usually do this process in two batches. Now it’s time to eat.
The biscotti last for a long time and freeze very well.
