Behind the Scenes at the Columbia City Bakery
This is my friend Marlena. She is co-owner and pasty chef at Columbia City Bakery, and runs the show along with her partner, owner and baker Even Andres. Even is the only James Beard Semifinalist baker in Seattle, and his breads are a city favorite. The breads, cakes, and pastries Marlena and the team bake out of this bakery have become a family obsession. Marlena made Mike a surprise peanut butter layer cake for his birthday, and tres leches cakes in mason jars for mine! So her desserts have become central to our whole existence. My mom is also a big fan, and orders pistachio snails and cinnamon twists on the regular. We were very lucky to get a tour behind the scenes of the bakery when we were visiting Seattle last month.
Columbia City Bakery is open for online orders for twice a week pick-up.
Scenes from the bakery: the brush line-up, the specific scoops used for each cookie, the big fat bread oven, and the work table.
Our favorite bakery goodies broken down for us. Pistachio snail filling, croissants, proof that Adam’s peanut butter is in the peanut butter cookies, and the famed peanut butter cookies ready to bake.
I felt very special getting to see the upstairs office! Walls adorned with James Beard nominations, cute vintage photos of Evan. Thank you, Marlena! We love you!
